The Audience Participation Portion of the Program…

I’m getting burned out – so please, tell me: What are y’all making for dinner? I make my menu for the coming week every Friday. So tomorrow is my menu day. We do a whole lot of the same ol’ same ol’, and I’m looking for some new ideas.

So – lay it on me. What’s for dinner?

  1. We’re still working on leftovers from Christmas. Hub tried to fix a country ham that future sil gave us, but he said his jaws still hurt from all the chewing…not a good indication that we will keep what’s left.

  2. um…. tonight my sis in law made rotini… it was kind of improvised because we forgot to get pasta sauce. but she sauteed red peppers and onion in one pan, and sweet italian sausage in another. then she added 2 cans of diced tomatoes to the peppers/onions. when the rotini was cooked, she mixed it and the sauce and meat in a baking dish, shredded real parmesan cheese over it, and stuckit in the oven so the cheese melted. oh, before she did that, she added basil and brown sugar to the sauce and some other spices.

    it was yummy!

  3. I love me some bruschetta stuffed chicken breast.

    Pound out 6-8 small chicken breasts flat with a meat mallet/tenderizer (I cut 4 big ones in half after pounding…and put them in a gallon zip lock bag to pound them…cuts down on the salmonella). Mix 1 box stove top Chicken stuffing, 1 can Italian diced tomatoes (undrained), 1/4 Cup chopped fresh basil, & 1 1/2 Cups mozerella cheese. Put the stuffing mix on a chicken breast, roll it up, put it in a baking dish seam side down. Pour 1 cup Italian dressing over and bake at 350 for 40 minutes. Sprinkle more shredded cheese over top and bake 5 more minutes. Yummy with steamed green beans!

  5. I tried twice to add recipes to your comments, but it boots me out every time. Soooo….if this actually goes through……go to today’s blog posting (Dec. 29th) for four new recipes. Two are main dishes and two are desserts. I have no idea if little ones would like the main dishes, but they are a hit with grown-ups.
